Ingredients
  

Protein

  • 1.25 lbs boneless skinless chicken thighs

Seasonings

  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

Vegetables

  • 8 ounces sliced mushrooms
  • 1 shallot shallot (chopped)
  • 2 cloves garlic (minced)

Liquids

  • 3 cups lower sodium chicken broth
  • 1 cup white rice
  • 0.5 lemon juice of ½ a lemon
  • 4 sprigs fresh thyme (stems removed)
  • 0.5 cup cream

Garnish

  • Few sprigs parsley (optional)
  • 0.5 cup Parmesan cheese (for serving)

Instructions
 

  • Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  • Brown chicken in oil, then remove from pan.
  • Sauté mushrooms and shallot, add garlic, then deglaze with broth.
  • Add rice, lemon, thyme, chicken, and cook until rice is tender, then stir in cream.
  • Garnish with parsley and serve with Parmesan cheese.

Notes

Use fresh thyme for best flavor and adjust cream for desired richness.
