Ingredients

  • 2 large chicken breasts
  • Salt pepper to taste Salt and pepper to season
  • Flour for dredging Flour for coating chicken
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces mushrooms sliced, try cremini or white
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy whipping cream

Instructions
 

  • Slice chicken breasts in half, season with salt and pepper, then dredge in flour.
  • Heat oil in a skillet over medium-high heat, cook chicken 4-5 minutes per side until golden, then set aside.
  • Melt butter, add mushrooms and Italian seasoning, cook until mushrooms release water and sear.
  • Add garlic, chicken broth, lemon juice, and Dijon mustard, stir and reduce by half (3-4 minutes).
  • Pour in cream, return chicken and mushrooms, cook for 5 minutes until sauce thickens and chicken is cooked through.

Notes

Serve with rice or pasta for a complete meal.
