Creamy Mushroom Chicken

Ingredients
  

Protein

  • 2 large chicken breasts
  • Salt & pepper (to taste) Salt & pepper to taste
  • Flour (for dredging) Flour for dredging

Oils & Fats

  • 2 tablespoons tablespoons olive oil
  • 2 tablespoons tablespoons butter

Mushrooms & Seasonings

  • 12 ounces ounces mushrooms (cremini or white, sliced)
  • 1/4 teaspoon teaspoon Italian seasoning
  • 3 cloves cloves garlic (minced)

Broth & Condiments

  • 1/2 cup cups chicken broth
  • 1/2 teaspoon teaspoon lemon juice
  • 1/2 teaspoon teaspoon Dijon mustard

Cream & Seasoning

  • 1 cup cups heavy/whipping cream

Instructions
 

  • Slice chicken breasts in half, season with salt & pepper, and dredge in flour.
  • Heat oil in a skillet over medium-high heat. Cook chicken 4-5 minutes per side until golden, then set aside.
  • Melt butter, add mushrooms and Italian seasoning. Cook until mushrooms release water and sear.
  • Add garlic, chicken broth, lemon juice, and Dijon mustard. Simmer until reduced by half.
  • Stir in cream, return chicken and mushrooms, cook until heated through and sauce thickens. Season as needed.

Notes

Serve with rice or pasta for a complete meal.
