Ingredients
  

Pasta

  • 2 cups plain Greek yogurt
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tsp garlic powder
  • 12 oz Brami fusilli pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup English cucumbers (chopped)
  • 1 pound cooked chicken breast (diced)
  • 4 oz fresh mozzarella
  • 2 tbsp fresh herbs (chopped)

Instructions
 

  • Cook the pasta according to package directions until al dente, then rinse under cold water.
  • In a small bowl, combine Greek yogurt, Dijon mustard, lemon juice, and garlic powder to make the dressing.
  • In a large bowl, mix cooled pasta, diced chicken, cherry tomatoes, cucumbers, mozzarella, and herbs.
  • Pour the dressing over the salad and gently toss to coat evenly. Season with salt and pepper to taste.

Notes

For extra flavor, add a squeeze of lemon or fresh herbs before serving.
