Instructions
Activate yeast: Dissolve yeast and sugar in warm water, let froth for 5-10 mins.
Mix yogurt, olive oil, salt, and activated yeast until smooth.
Stir in flour and parsley to form a dough; knead for 3-4 mins until smooth.
Divide dough into 10 portions, let rest covered for 15 mins.
Roll each portion into a 7-inch circle, cook in a pan with oil until golden, flipping after 1-1.5 mins.
Serve warm, garnished with parsley if desired.
Notes
Keep flatbreads warm in a towel to maintain softness.
