Ingredients
  

Dough

  • 3.75 cups all-purpose flour
  • 1.25 cups warm water (105-110˚F)
  • 0.75 cup Greek-style yogurt
  • 2.25 teaspoons active dried yeast (1 packet)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 0.25 cup finely chopped flat leaf parsley

Instructions
 

  • Activate yeast: Dissolve yeast and sugar in warm water, let froth for 5-10 mins.
  • Mix yogurt, olive oil, salt, and activated yeast until smooth.
  • Stir in flour and parsley to form a dough; knead for 3-4 mins until smooth.
  • Divide dough into 10 portions, let rest covered for 15 mins.
  • Roll each portion into a 7-inch circle, cook in a pan with oil until golden, flipping after 1-1.5 mins.
  • Serve warm, garnished with parsley if desired.

Notes

Keep flatbreads warm in a towel to maintain softness.
