Instructions
Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until translucent.
Add garlic and ginger; cook for 2 minutes until fragrant.
Add carrots, cook for 5 minutes, then pour in broth. Bring to a boil, then simmer for 20 minutes until carrots are tender.
Blend the soup until smooth using an immersion or countertop blender.
Stir in coconut milk, heat gently, then season with salt and pepper. Garnish with herbs if desired.
Notes
This soup is best served hot and can be stored in the refrigerator for up to 3 days.
