Creamy Garlic Parmesan Rice

Ingredients

  • 1 cup long-grain white rice
  • 3 Tablespoons butter
  • 4 cloves garlic (minced)
  • 2.25 cups chicken stock (or vegetable stock)
  • 0.5 teaspoon kosher salt
  • 0.25 cup whole milk
  • 0.5 cup freshly grated parmesan cheese

Instructions
 

  • Rinse rice until water runs clear. Set aside.
  • Melt butter in a saucepan over medium-low heat. Add garlic and cook for 2-3 minutes.
  • Add rice, toast for 2 minutes, then add salt and broth. Bring to a boil, then simmer covered for 18 minutes. Rest for 10 minutes before serving.
  • Warm milk in microwave, then stir in Parmesan cheese. Serve rice topped with the cheese mixture.

Notes

For extra flavor, add a sprinkle of fresh herbs.
