Ingredients
  

  • 2 boneless, skinless chicken breasts chicken breasts about 1 pound
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8 ounces mushrooms sliced (such as cremini or button)
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 0.5 cup grated Parmesan cheese
  • fresh parsley for garnish (optional)

Instructions
 

  • Season the chicken breasts with salt and pepper on both sides.
  • Cook the chicken in olive oil over medium-high heat for 6-7 minutes per side, until golden brown and cooked through. Remove and set aside.
  • Add mushrooms to the skillet and cook for 5 minutes, until browned and tender. Add garlic and cook for 1 more minute.
  • Pour in chicken broth, scraping the bottom of the skillet. Simmer for 2-3 minutes, then stir in heavy cream, thyme, parsley, and Parmesan cheese. Cook until slightly thickened.
  • Return the chicken to the skillet, spooning sauce over the top. Simmer for 2-3 minutes to heat through.

Notes

For an enhanced flavor, use fresh herbs instead of dried thyme and parsley.
