Ingredients
  

Protein

  • 2 piece Chicken Breasts brought close to room temp
  • 1/4 cup Flour see notes
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1 tbsp Olive Oil
  • 1 tbsp Butter preferably unsalted
  • 9 oz Baby Button Mushrooms sliced fairly thin
  • 3/4 cup Heavy/Double Cream at room temp
  • 3/4 cup Chicken Stock
  • 1 oz Freshly Grated Parmesan
  • 2 cloves Garlic finely diced
  • 1 tbsp Fresh Parsley finely diced, plus more to garnish
  • 1 tbsp Fresh Chives finely diced
  • 1 tbsp Butter preferably unsalted (can sub oil, this is to fry the mushrooms)
  • 0.5-1 tsp Lemon Juice see notes

Instructions
 

  • Slice each chicken breast horizontally to create 4 even pieces.
  • Mix flour, garlic powder, salt, and black pepper; dredge chicken in the mixture.
  • Cook chicken in oil and butter until golden and cooked through; set aside.
  • Fry mushrooms in butter until golden, add garlic, then pour in stock and cream. Add herbs and simmer until slightly thickened.
  • Stir in Parmesan, add lemon juice, salt, and pepper; simmer briefly. Return chicken to sauce and serve.

Notes

Adjust lemon juice to taste for brightness.
