Ingredients
  

Bell Peppers

  • 4 pcs bell peppers (halved)

Chicken

  • 4 cups cooked shredded chicken breast

Sauce

  • 1/2 cup salsa verde

Cheese

  • 4 oz reduced-fat cream cheese
  • 4 oz reduced-fat cheddar cheese (grated)

Spices & Seasonings

  • 1 tsp paprika
  • 1/2 tsp onion powder

Garnish

  • 2 scallions scallions (chopped)

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare peppers and mix filling.
  • Combine cream cheese, paprika, onion powder, salsa verde, and half of the cheddar until smooth.
  • Fold in shredded chicken and chopped scallions.
  • Stuff peppers with the mixture, top with remaining cheddar, and bake covered for 45 minutes. Uncover and bake 15 more minutes.

Notes

For extra flavor, add a squeeze of lime before serving.
