Instructions
Preheat oven to 350°F (175°C). Prepare peppers and mix filling.
Combine cream cheese, paprika, onion powder, salsa verde, and half of the cheddar until smooth.
Fold in shredded chicken and chopped scallions.
Stuff peppers with the mixture, top with remaining cheddar, and bake covered for 45 minutes. Uncover and bake 15 more minutes.
Notes
For extra flavor, add a squeeze of lime before serving.
