Ingredients
  

Pasta

  • 12 ounces pasta (fusilli or penne)
  • 2 cups cooked chicken, shredded or cubed
  • 1 cup frozen mixed vegetables
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • to taste Salt and pepper
  • 1 cup grated cheddar cheese (optional)
  • for garnish Fresh parsley (optional)

Instructions
 

  • Cook pasta according to package instructions; drain and set aside.
  • In a large skillet, melt butter and sauté chopped onion and minced garlic until fragrant.
  • Add chicken, mixed vegetables, chicken broth, heavy cream, thyme, and rosemary; simmer until heated through and slightly thickened.
