Ingredients
  

Oil

  • 2 tablespoons olive oil (divided, avocado oil)

Chicken

  • 1.5 pounds chicken breasts (boneless and skinless)

Garlic

  • 3 cloves garlic cloves (crushed)

Mushrooms

  • 8 ounces button mushrooms (halved)

Broth

  • 1 1/4 cups chicken broth

Cornstarch

  • 1/2 teaspoon cornstarch

Salt

  • 1/2 teaspoon salt

Pepper

  • 1/4 teaspoon pepper

Cream Cheese

  • 4 ounces Light cream cheese (softened)

Parsley

  • 1 tablespoon fresh chopped curly parsley

Instructions
 

  • Heat 1 tablespoon of oil in a pan over medium-high heat.
  • Cook chicken until golden-brown, then set aside.
  • Sauté mushrooms until golden, add garlic, then cook briefly.
  • Mix cornstarch with water, add broth and simmer until bubbling, then stir in cream cheese.
  • Return chicken to pan, spoon sauce over, garnish with parsley, and serve.

Notes

For a richer flavor, use heavy cream instead of light cream cheese.
