Ingredients
  

Protein

  • 1.5 lbs Chicken Breast boneless, skinless
  • 1 lb Pasta penne or preferred shape
  • 2 large Bell Peppers red, yellow, orange
  • 1 large Onion yellow
  • 8 oz Cream Cheese softened
  • 1 cup Chicken Broth low-sodium recommended
  • 0.5 cup Heavy Cream
  • 2-3 tablespoons Fajita Seasoning adjust to taste
  • 2 tablespoons Olive Oil for sautéing
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt and Black Pepper seasoning to taste

Optional Garnishes

  • Fresh cilantro, chopped green onions, shredded cheese, sour cream, lime juice for serving

Instructions
 

  • Cook pasta according to package instructions; drain and set aside.
  • Slice chicken and season with fajita seasoning, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat; cook chicken until browned and cooked through. Remove and set aside.
  • In the same skillet, sauté sliced bell peppers and onion until tender. Add garlic powder and onion powder.
  • Return chicken to the skillet, add cream cheese, chicken broth, and heavy cream; stir until smooth and heated through. Mix in cooked pasta.

Notes

For a lighter version, substitute heavy cream with milk or half-and-half. Adjust seasoning to taste.
