Instructions
Sauté diced onions in olive oil until golden, then add carrots and garlic, cooking for 5 minutes.
Add chicken, cauliflower, Italian seasoning, and broth. Simmer for 20 minutes, flipping chicken halfway.
Transfer chicken to a bowl, shred into bite-sized pieces, and set aside.
Blend cooked cauliflower and some broth until smooth. Return to pot with shredded chicken, peas, and half and half. Warm for 3-4 minutes.
Adjust seasoning with salt and pepper, then serve hot.
Notes
For a lighter version, reduce the half and half or use milk instead.
