Creamy Chicken Comfort Soup

Ingredients
  

Olive oil

  • 1 tablespoon Olive oil

Onion

  • 1 medium Onion diced (about 1 cup)

Carrots

  • 8 ounces Carrots peeled and diced into 1/2-inch cubes

Garlic

  • 6 cloves Garlic minced

Cauliflower

  • 1 head Cauliflower cut into large florets (about 4-5 cups)

Chicken breasts

  • 1 pound Boneless, skinless chicken breasts

Chicken broth

  • 5 cups Reduced-sodium chicken broth

Italian seasoning

  • 2 teaspoons Italian seasoning

Peas

  • 1 cup Peas fresh or frozen

Half and half

  • 1 cup Half and half or 1/2 cup for a lighter option

Sea salt

  • 2 teaspoons Sea salt to taste

Black pepper

  • 0.5 teaspoon Black pepper to taste

Instructions
 

  • Sauté diced onions in olive oil until golden, then add carrots and garlic, cooking for 5 minutes.
  • Add chicken, cauliflower, Italian seasoning, and broth. Simmer for 20 minutes, flipping chicken halfway.
  • Transfer chicken to a bowl, shred into bite-sized pieces, and set aside.
  • Blend cooked cauliflower and some broth until smooth. Return to pot with shredded chicken, peas, and half and half. Warm for 3-4 minutes.
  • Adjust seasoning with salt and pepper, then serve hot.

Notes

For a lighter version, reduce the half and half or use milk instead.
