Creamy Chicken Broccoli Soup

Ingredients
  

Oil

  • 2 tablespoons Olive Oil (or avocado oil)

Vegetables

  • 1 large Sweet Onion (diced)
  • 2 large Carrots (peeled and finely diced)
  • 2 stalks Celery (finely sliced)
  • 1 chopped Bell Pepper
  • 2-3 cloves Garlic (pressed)

Seasoning

  • 1 tablespoon Italian Seasoning Mix

Protein

  • 1 pound Boneless skinless chicken breast

Broth

  • 6 cups Low sodium chicken broth

Broccoli

  • 1 head Medium Head Broccoli (broken into florets)

Dairy & Flour

  • 2 cups Milk of your choice (we used 2%)
  • 2 tablespoons Gluten-Free Flour

Seasoning

  • to taste Sea salt and pepper

Garnish

  • 2-3 tablespoons Fresh chopped parsley

Instructions
 

  • Heat olive oil in a large pot over medium-high heat.
  • Sauté diced onion, carrots, celery, bell pepper, garlic, and Italian seasoning until softened, about 5 minutes.
  • Add chicken and broth; simmer until chicken is cooked, about 20-25 minutes. Remove, shred, and return to the pot.
  • Whisk milk and flour; add to the pot with broccoli, salt, and pepper. Simmer until broccoli is tender and soup thickens, about 5-6 minutes.
  • Serve hot, garnished with chopped parsley.

Notes

For a creamier texture, blend a portion of the soup before serving.
