Instructions
Heat olive oil in a large pot over medium-high heat.
Sauté diced onion, carrots, celery, bell pepper, garlic, and Italian seasoning until softened, about 5 minutes.
Add chicken and broth; simmer until chicken is cooked, about 20-25 minutes. Remove, shred, and return to the pot.
Whisk milk and flour; add to the pot with broccoli, salt, and pepper. Simmer until broccoli is tender and soup thickens, about 5-6 minutes.
Serve hot, garnished with chopped parsley.
Notes
For a creamier texture, blend a portion of the soup before serving.
