Creamy Chicken and Broccoli Pumpkin Alfredo

Ingredients
  

Pasta

  • 1 lbs penne pasta or any pasta
  • 1 cup reserved pasta water
  • 2 tablespoons light butter of choice
  • 1 medium brown onion sliced thinly
  • 2 cloves garlic crushed or minced
  • 1 lbs skinless chicken breast tenders cubed
  • 1 3/4 cups pumpkin puree canned or fresh, steamed until soft
  • 2 cups skim/low fat milk
  • 2 cups broccoli florets
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon vegetable stock powder
  • 1 pinch salt to season

Instructions
 

  • Cook pasta in salted boiling water until al dente; reserve 1 cup of water.
  • In a large pan, melt butter, cook onion until transparent, add garlic, then chicken; cook until chicken is done.
  • Add pumpkin and milk; stir until combined and simmer to thicken. Mix in broccoli, parmesan, stock powder, and salt; cook until broccoli is tender.
  • Gradually add reserved pasta water, stirring to reach desired sauce consistency. Add extra milk if needed.
  • Stir cooked pasta into the sauce and serve with extra parmesan cheese.

Notes

For a creamier sauce, add a splash of extra milk or cheese.
