reserved pasta water

light butter of choice

brown onion
sliced thinly

garlic
crushed or minced

skinless chicken breast tenders
cubed

pumpkin puree
canned or fresh, steamed until soft

skim/low fat milk

cups
broccoli florets

freshly grated parmesan cheese

vegetable stock powder

Instructions
Cook pasta in salted boiling water until al dente; reserve 1 cup of water.
In a large pan, melt butter, cook onion until transparent, add garlic, then chicken; cook until chicken is done.
Add pumpkin and milk; stir until combined and simmer to thicken. Mix in broccoli, parmesan, stock powder, and salt; cook until broccoli is tender.
Gradually add reserved pasta water, stirring to reach desired sauce consistency. Add extra milk if needed.
Stir cooked pasta into the sauce and serve with extra parmesan cheese.
Notes
For a creamier sauce, add a splash of extra milk or cheese.
