Ingredients
  

Rice

  • 1 cup uncooked jasmine or basmati rice

Chicken

  • 2 pieces boneless, skinless chicken breasts about 1 pound total

Avocado

  • 2 pieces ripe avocados

Olive Oil

  • 1 tablespoon extra virgin olive oil

Lime

  • 1 piece lime for juice

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Optional toppings

  • Cherry tomatoes, black beans, corn, shredded cheese, hot sauce, fresh cilantro Various optional toppings

Instructions
 

  • Rinse rice and cook with water and salt until tender, then let sit covered for 5 minutes.
  • Season chicken with salt, pepper, garlic powder, and paprika, then cook in olive oil until golden and cooked through. Rest and slice.
  • Blend avocados with lime juice, salt, and water until smooth to make the creamy sauce.
  • Assemble bowls with rice, sliced chicken, and drizzle with avocado sauce. Add optional toppings and garnish with cilantro.
