  • 10 oz tuna (in spring water)
  • 0.25 cup dried cranberries
  • 0.25 cup celery (finely chopped)
  • 0.25 cup red onion (finely diced)
  • 0.5 cup light mayo
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice (freshly squeezed)
  • 0.25 cup fresh parsley (finely chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper

Instructions
 

  • Drain the tuna and combine it with cranberries, celery, red onion, mayo, mustard, lemon juice, parsley, salt, and pepper in a bowl.
  • Mix well and taste, adjusting seasoning if needed.
  • Serve immediately or refrigerate for up to 3 days.

This salad is great served on its own or as a filling for sandwiches or lettuce wraps.
