Ingredients
  

Dry ingredients

  • 1 ½ cups whole wheat pastry flour
  • ½ cup vanilla protein powder
  • 2 tsp baking powder
  • ½ tsp baking soda

Wet ingredients

  • ¾ cup plain Greek yogurt
  • cup coconut sugar (or packed brown sugar)
  • cup avocado oil
  • ¼ cup whole milk (e.g., Darigold Fit)
  • 2 large eggs
  • 2 tbsp fresh orange juice
  • 1 tbsp fresh orange zest
  • 2 tsp vanilla extract
  • 1 cup chopped fresh cranberries (divided)

Instructions
 

  • Preheat oven to 375°F (190°C) and line a muffin tin.
  • Mix dry ingredients in a bowl; set aside.
  • Whisk wet ingredients until smooth.
  • Combine wet and dry, fold in ¾ cup cranberries.
  • Divide batter into 12 muffins, top with remaining cranberries, bake 18-20 mins.

Use fresh cranberries for best flavor and texture.
