Instructions
Preheat oven to 375°F (190°C).
Simmer cranberries, orange juice, honey, balsamic vinegar, orange zest, and garlic until cranberries burst and sauce thickens (~8-10 min).
Season chicken with salt, pepper, and thyme. Sear in hot skillet for 2-3 min per side.
Pour sauce over chicken and transfer skillet to oven. Bake for 20-25 min until cooked through.
Let rest 5 min, then garnish with chopped parsley before serving.
Notes
Use fresh cranberries for best flavor. Adjust seasoning as desired.
