  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 0.5 cup orange juice
  • 0.25 cup honey
  • 1 tablespoon olive oil
  • 2 teaspoons grated orange zest
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoon dried thyme
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Simmer cranberries, orange juice, honey, balsamic vinegar, orange zest, and garlic until cranberries burst and sauce thickens (~8-10 min).
  • Season chicken with salt, pepper, and thyme. Sear in hot skillet for 2-3 min per side.
  • Pour sauce over chicken and transfer skillet to oven. Bake for 20-25 min until cooked through.
  • Let rest 5 min, then garnish with chopped parsley before serving.

Notes

Use fresh cranberries for best flavor. Adjust seasoning as desired.
