  • 0.5 cup Greek yogurt
  • 0.25 cup mayonnaise
  • 1 tablespoon honey or agave nectar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Main ingredients

  • 4 cups cubed or shredded cooked chicken
  • 1 cup apple, cut into 1/2-in chunks about 1 large apple
  • 0.5 cup celery, cut into 1/2-in chunks about 1 large rib
  • 0.5 cup dried cranberries
  • 0.5 cup chopped walnuts, toasted
  • 1 tablespoon fresh minced thyme
  • 1 tablespoon minced fresh parsley

Serving options

  • Mixed greens, butter lettuce leaves, or sandwich buns for serving

Instructions
 

  • Mix Greek yogurt, mayonnaise, honey, Dijon mustard, lemon juice, salt, and pepper to make the dressing.
  • Combine cooked chicken, apple, celery, cranberries, walnuts, thyme, and parsley in a bowl.
  • Toss the chicken mixture with the dressing until well coated.
  • Serve on greens, lettuce, or buns as desired.

Notes

Chill the salad for at least 30 minutes before serving for best flavor.
