Ingredients
  

Vegetables

  • 4 pieces Carrots peeled and chopped
  • 1 inch Fresh Ginger peeled and grated
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 0.5 cup Coconut Milk (optional)
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper

Instructions
 

  • Wash, peel, and chop the carrots; finely chop onion and garlic; grate ginger.
  • Sauté onions and garlic in oil until translucent, about 4-5 minutes.
  • Add carrots and cook for 5 minutes, then stir in ginger and cumin for 1-2 minutes.
  • Pour in vegetable broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
  • Puree the soup with an immersion blender, then season with salt and pepper.
  • Serve warm, garnished with coconut milk or herbs if desired.
