Instructions
Wash, peel, and chop the carrots; finely chop onion and garlic; grate ginger.
Sauté onions and garlic in oil until translucent, about 4-5 minutes.
Add carrots and cook for 5 minutes, then stir in ginger and cumin for 1-2 minutes.
Pour in vegetable broth, bring to a boil, then simmer for 20 minutes until carrots are tender.
Puree the soup with an immersion blender, then season with salt and pepper.
Serve warm, garnished with coconut milk or herbs if desired.
