Instructions
Preheat oven to 375°F (190°C).
Cook diced potatoes in 1 tbsp olive oil for 15 minutes until golden, then push to side.
Cook onions in remaining oil for 3 minutes, then add ground beef and cook until browned. Add garlic and seasonings, then pour in beef broth.
Combine everything in the skillet, top with cheese, and bake for 10 minutes until bubbly. Garnish with parsley before serving.
Notes
Ensure potatoes are diced uniformly for even cooking.
