Ingredients
  

Meat and Potatoes

  • 1.5 lbs ground beef
  • 4 medium russet potatoes diced into ½-inch cubes
  • 1 large yellow onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tsp salt
  • ¼ cup beef broth
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook diced potatoes in 1 tbsp olive oil for 15 minutes until golden, then push to side.
  • Cook onions in remaining oil for 3 minutes, then add ground beef and cook until browned. Add garlic and seasonings, then pour in beef broth.
  • Combine everything in the skillet, top with cheese, and bake for 10 minutes until bubbly. Garnish with parsley before serving.

Notes

Ensure potatoes are diced uniformly for even cooking.
