Instructions
Pulse oats in a food processor until fine.
Add eggs, cottage cheese, vanilla; blend until combined. Rest for 5–10 mins.
Preheat waffle iron, spray with cooking spray.
Pour ⅓ cup batter, cook 5–6 mins until golden and crisp.
Repeat with remaining batter. Serve warm with toppings.
Notes
