Ingredients
  

Dough

  • 1 cup cottage cheese (preferably full-fat)
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 2 large eggs
  • 0.25 cup milk (adjust as needed)
  • 1 tablespoon sugar (optional, for slight sweetness)
  • 1 teaspoon vanilla extract
  • Pinch salt
  • for greasing Butter or oil for greasing the waffle iron
  • as needed Fresh berries (strawberries, blueberries, raspberries) for topping
  • as needed Sliced banana for topping
  • as needed Maple syrup optional
  • as needed Powdered sugar for garnish, optional

Instructions
 

  • Preheat the waffle iron according to instructions.
  • Mix flour, baking powder, sugar, and salt in a bowl.
  • Beat eggs, then add cottage cheese, milk, and vanilla. Combine gently.
  • Fold wet ingredients into dry until just combined. Grease the waffle iron.
  • Pour batter onto the waffle iron, cook for 4-6 minutes until golden. Serve topped with berries, banana, and syrup.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the batter.
