Instructions
Mix cottage cheese, flour, egg, salt, and 2 tbsp olive oil to form a soft dough.
Let the dough rest for 5–10 minutes, then divide into small portions and flatten into circles.
Heat a skillet with a little olive oil over medium heat.
Cook each flatbread for 2–3 minutes per side until golden and puffed.
Stack warm flatbreads under a towel until ready to serve.
Notes
Use a non-stick skillet for easier cooking and less oil.
