Avocado

  • ½ ripe ripe avocado the kind that gives just a little when squeezed

Cottage Cheese

  • ½ cup cottage cheese full-fat tastes the creamiest, but any works

Spices and Seasonings

  • teaspoon paprika adds warmth
  • teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon Dijon mustard my secret weapon for depth

Green Onion

  • 1 tablespoon sliced green onion

Seasoning

Seeds

Instructions
 

  • Hard-boil the egg: place in boiling water for 9-12 minutes, then cool and peel.
  • Toast the bread slices until golden and lightly crisp.
  • Mash the avocado and chopped egg in a bowl, then stir in seasonings and green onion.
  • Spread the mixture on the toasted bread, then sprinkle with seasoning and hemp seeds.
  • Serve immediately while the toast is crisp.
