  • 2 large eggs
  • 0.5 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 1 small apple, grated

For cooking

Instructions
 

  • Blend cottage cheese and eggs until smooth.
  • Mix dry ingredients in a bowl.
  • Combine wet and dry mixtures, then fold in grated apple.
  • Heat skillet, add butter/oil, and cook batter in ΒΌ-cup portions for 2-3 minutes per side.
  • Flip pancakes until golden, then serve.
