  • 0.25 cup cream cheese, softened
  • 2 large eggs, beaten
  • 1/3 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 green chili finely chopped
  • 2 tablespoons fresh chives, minced
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika

  • about 3 cups vegetable oil for frying

Instructions
 

  • Mix corn with softened cream cheese and mash some kernels for texture.
  • Fold in cheeses, spices, salt, and pepper.
  • Add flour, cornstarch, and beaten eggs; stir until combined.
  • Form into 1.5-inch balls, chill for 30 minutes.
  • Fry in hot oil until golden, about 3-4 minutes per batch.
  • Drain on paper towels and serve hot.

Ensure oil is hot enough before frying to achieve crispy bites.
