Vegetables

  • 2 cups Yukon Gold Potatoes (or red potatoes as a substitute)
  • 2 tablespoons Olive Oil (or vegetable oil as a substitute)
  • 2 tablespoons Butter (unsalted preferred)
  • 1 medium Onion (diced)
  • 2 medium Carrots (diced)
  • 2 stalks Celery (diced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Dried Herbs (Rosemary, Thyme) can substitute with Italian seasoning
  • 0.25 cup Plain Flour (or cornstarch for gluten-free)
  • 1 cup Milk (dairy-free optional)
  • 4 cups Chicken Stock (or vegetable stock for vegetarian version)
  • 0.5 cup Low-fat Cheddar Cheese (optional)
  • 0.25 cup Fresh Parsley (for garnish)
  • to taste N/A Salt & Pepper (to season)

Instructions
 

  • Sauté diced onion, carrots, and celery in olive oil and butter until tender.
  • Add minced garlic and dried herbs; cook for 1 minute.
  • Stir in flour and cook for 2 minutes, then add chicken stock and bring to a boil.
  • Add diced potatoes and chicken; simmer until cooked through, about 20 minutes.
  • Stir in milk and cheese (if using), season with salt and pepper, then garnish with parsley before serving.

Notes

For a gluten-free version, substitute flour with cornstarch and ensure stock is gluten-free.
