Instructions
Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, celery, and garlic; cook until softened.
Add chopped chicken, rosemary, and thyme; cook until chicken is browned.
Sprinkle flour over the mixture, stir well, then gradually add chicken broth and milk, bringing to a simmer.
Add potatoes, season with salt and pepper, and cook until potatoes are tender.
Stir in cheese and parsley; cook until cheese melts. Serve hot.
Notes
For extra flavor, add a squeeze of lemon or a dash of hot sauce before serving.
