  • 1 tablespoon butter (20 g)

onion

  • 1 medium onion, chopped

carrots

  • 2 medium carrots, chopped

celery sticks

  • 2 to 3 sticks celery sticks, chopped

garlic cloves

  • 2 to 3 cloves garlic, minced

fresh rosemary

  • 1/2 tablespoon chopped fresh rosemary

fresh thyme

  • 1/2 tablespoon chopped fresh thyme

chicken breast

  • 1 pound chicken breast (450 g)

all-purpose flour

  • 2 tablespoons all-purpose flour

milk

  • 2 cups milk (475 ml)

potatoes

  • 1 1/2 pounds potatoes, peeled and cubed (650 g)

chicken broth

  • 4 cups chicken broth (1 liter)

low-fat cheddar cheese

  • 1 cup low-fat cheddar cheese (120 g)

parsley

  • a handful roughly chopped fresh parsley

salt and black pepper

  • to taste salt and freshly ground black pepper

Instructions
 

  • Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, celery, and garlic; cook until softened.
  • Add chopped chicken, rosemary, and thyme; cook until chicken is browned.
  • Sprinkle flour over the mixture, stir well, then gradually add chicken broth and milk, bringing to a simmer.
  • Add potatoes, season with salt and pepper, and cook until potatoes are tender.
  • Stir in cheese and parsley; cook until cheese melts. Serve hot.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce before serving.
