Ingredients
  

pasta

  • 4 oz whole wheat spaghetti uncooked

vegetables

  • 1 medium zucchini spiralized
  • 2 pieces carrots spiralized or shredded

chickpeas

  • 2 cups chickpeas drained & rinsed

garnishes

  • to garnish green onions
  • to garnish sesame seeds

sauce

  • 1/4 cup almond butter all natural
  • 1 teaspoon ginger finely grated
  • 1 clove garlic minced
  • 2 tablespoons soy sauce reduced sodium
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon lime juice
  • 1/2 teaspoon red pepper flakes optional; omit for non-spicy version

Instructions
 

  • Cook pasta according to package instructions, rinse with cold water, and set aside.
  • Mix almond butter, ginger, garlic, soy sauce, rice vinegar, sesame oil, maple syrup, lime juice, and red pepper flakes in a jar to make the sauce.
  • Divide sauce, chickpeas, spiralized vegetables, and pasta into four containers for meal prep.
  • Let sauce sit at room temperature for 10 minutes, then drizzle over noodles, toss, and serve cold.

Notes

For extra flavor, sprinkle with additional sesame seeds and chopped green onions before serving.
