Ingredients
  

Pasta and Vegetables

  • 4 ounces whole wheat spaghetti
  • 1 piece zucchini, spiralized
  • 2 pieces thick carrots, spiralized
  • 1 can (10.5 ounces) chickpeas, drained and rinsed
  • sprinkling sliced green onions
  • sprinkling chopped peanuts
  • sprinkling sesame seeds
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 clove garlic, grated
  • 1/2 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes
  • squeeze fresh lime

Instructions
 

  • Cook the spaghetti, then drain and set aside.
  • Combine cooked pasta, spiralized zucchini and carrots, and chickpeas in a large bowl.
  • Whisk together peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, garlic, ginger, pepper flakes, and lime juice to make the sauce.
  • Pour sauce over the pasta and vegetables, then gently toss to combine.
  • Portion the noodles and garnish with green onions, chopped peanuts, and sesame seeds.

Notes

For extra flavor, add a dash of chili oil or hot sauce.
