Instructions
Cook the spaghetti, then drain and set aside.
Combine cooked pasta, spiralized zucchini and carrots, and chickpeas in a large bowl.
Whisk together peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, garlic, ginger, pepper flakes, and lime juice to make the sauce.
Pour sauce over the pasta and vegetables, then gently toss to combine.
Portion the noodles and garnish with green onions, chopped peanuts, and sesame seeds.
Notes
For extra flavor, add a dash of chili oil or hot sauce.
