Instructions
Combine Gochugaru, sesame seeds, spring onion, and garlic in a heatproof bowl.
Heat vegetable oil until shimmering, then pour over spice mixture.
Add soy sauce and vinegar, stirring until combined. Mix peanut sesame paste with water until smooth.
Combine the peanut sesame sauce with the spice mixture. Cook noodles, rinse in cold water, drain, and place in a bowl.
Pour sauce over noodles, top with cucumber and sesame seeds, then serve.
Notes
Adjust water for desired sauce consistency and add cucumber for freshness.
