Ingredients
  

Pasta

  • 10 ounces spaghetti (regular or whole-wheat)
  • 1 red bell pepper red bell pepper, thinly sliced
  • 2 large carrots, grated
  • 1 cup green onions, finely chopped
  • 1 cup cilantro, finely chopped
  • 2 cups cabbage, finely chopped (red or green)
  • 0.5 cup peanut butter
  • 0.25 cup low-sodium soy sauce
  • 2 tbsp lime juice
  • Optional spices sriracha or red pepper flakes for heat Optional

Instructions
 

  • Cook spaghetti until al dente, then rinse under cold water.
  • Chop vegetables and place in a large bowl.
  • Blend peanut butter, soy sauce, lime juice, and spices until smooth.
  • Add cooked spaghetti to vegetables, pour dressing over, and toss to combine.
  • Serve immediately, garnished with nuts and herbs if desired.

Notes

For extra flavor, add crushed peanuts or fresh herbs before serving.
