A delicious and healthy twist on traditional coffee cake, this baked oatmeal is perfect for breakfast or a snack!

Ingredients
  

Dry Ingredients

  • 1.75 cups old fashioned rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 1-2 tbsp flax, chia, or hemp seeds
  • 1.75 cups unsweetened almond milk or sub whatever milk you have on hand
  • 0.5 tsp vanilla extract
  • 0.5 cup unsweetened applesauce can sub mashed banana
  • 1-2 tbsp maple syrup
  • 0.33 cup old fashioned rolled oats for topping
  • 2 tbsp raw sugar, coconut sugar, or cane sugar reduce sugar by half for a less sweet version
  • 2 tbsp cold butter or vegan butter
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 375°F.
  • Spray an 8x8 pan with cooking oil spray. Mix oats, baking powder, cinnamon, salt, and seeds in the pan.
  • Stir in almond milk, vanilla extract, applesauce, and maple syrup.
  • Pulse ⅓ cup oats in a food processor with butter, sugar, and cinnamon until crumbly.
  • Top oatmeal mixture with crumb topping.
  • Bake for 30 minutes or until set and topping is crisp.

Notes

Drizzle with melted nut butter for extra flavor!
