Instructions
Mix chia seeds, coconut milk, vanilla extract, and agave syrup in a bowl. Let sit for 10 minutes to thicken.
In a small saucepan, combine raspberries, sugar, water, lemon juice, and vanilla. Simmer until berries break down, about 5 minutes.
Layer the chia pudding with raspberry sauce in serving glasses. Top with coconut flakes and fresh raspberries.
Notes
For a creamier pudding, let the chia mixture sit overnight in the fridge.
