Ingredients
  

Dry ingredients

  • 0.5 cup chia seeds
  • 2 Tbsp Agave syrup See Notes!
  • 1.5 cups full-fat coconut milk or cream See Notes!
  • 1 tsp vanilla extract

Fruits

  • 2 cups raspberries fresh or frozen
  • 0.5 cup organic cane sugar
  • 0.25 cup filtered water
  • 1 tsp freshly-squeezed lemon juice
  • 0.5 tsp vanilla extract

Toppings

  • Coconut flakes
  • Fresh raspberries

Instructions
 

  • Mix chia seeds, coconut milk, vanilla extract, and agave syrup in a bowl. Let sit for 10 minutes to thicken.
  • In a small saucepan, combine raspberries, sugar, water, lemon juice, and vanilla. Simmer until berries break down, about 5 minutes.
  • Layer the chia pudding with raspberry sauce in serving glasses. Top with coconut flakes and fresh raspberries.

Notes

For a creamier pudding, let the chia mixture sit overnight in the fridge.
