  • 4 fillets salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste Salt and pepper
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon curry powder
  • ½ teaspoon paprika
  • 1 can (14 oz) coconut milk
  • 1 tablespoon tomato paste
  • 1 teaspoon honey
  • 1 tablespoon soy sauce
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lime juice
  • ¼ cup fresh cilantro, chopped for garnish

Instructions
 

  • Pat dry and sear salmon fillets in hot oil until crispy, then set aside.
  • In the same pan, melt butter and sauté garlic and onion until fragrant. Add ginger, curry powder, and paprika; cook briefly.
  • Stir in tomato paste, then pour in coconut milk. Add honey, soy sauce, red pepper flakes, and simmer until thickened. Add lime juice.
  • Return salmon to the pan, spoon sauce over, and simmer briefly to absorb flavors.
  • Garnish with cilantro and serve with rice or naan.

Notes

Ensure not to overcook the salmon for tender, flaky fillets.
