Coconut Crumble Bars

Ingredients
  

Dough and Crust

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract

Filling

  • 3 cups sweetened shredded coconut
  • 1 14 oz can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional) optional
  • 1/4 teaspoon salt
  • 1/2 cup chopped macadamia nuts or almonds (optional) optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment and grease.
  • Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Add egg and vanilla, combine.
  • Press 2/3 of the mixture into the pan for crust. Reserve 1/3 for topping.
  • Mix coconut, condensed milk, vanilla, almond extract, and salt. Fold in nuts if using.
  • Spread coconut filling over crust. Sprinkle reserved crumble on top. Bake 30-35 mins until golden.
  • Cool completely, then refrigerate at least 2 hours before cutting into bars.

Notes

Refrigerate for best texture and easier cutting.
