Instructions
Preheat oven to 375°F (190°C). Line a muffin tin.
Mix dry ingredients in a bowl. Beat eggs and combine with sugar, coconut oil, coconut milk, and vanilla.
Fold wet into dry, then add shredded coconut and chocolate chips.
Fill muffin cups about ¾ full. Bake for 18-22 minutes.
Cool for 5 minutes, then transfer to wire rack to cool completely.
