Instructions
Preheat oven to 100°C. Dry the clementine peels for 1-2 hrs until crisp.
Crush dried peels and break cinnamon sticks, star anise, and other spices. Mix and crush lightly.
Spoon the spice mix into a sterilized jar and seal. Store for 2-3 months.
To make chai, boil 300ml water with a tea bag and ½ tbsp spice mix. Add 150ml milk, boil again, then strain and serve.
Notes
Store the spice mix in a cool, dark place for best flavor.
