Clementine Chai Spice Mix

Ingredients
  

Spice Mix

  • 6 pieces clementine peel from 6 clementines
  • 2 sticks cinnamon sticks
  • 4 pieces star anise
  • 30 pods cardamom pods
  • 1 tbsp whole cloves
  • 1 tbsp black peppercorns
  • 1 tbsp ground ginger
  • to taste breakfast tea to serve
  • to serve full cream milk, coconut milk or tiger nut drink to serve
  • to taste caster sugar, honey or maple syrup to serve

Instructions
 

  • Preheat oven to 100°C. Dry the clementine peels for 1-2 hrs until crisp.
  • Crush dried peels and break cinnamon sticks, star anise, and other spices. Mix and crush lightly.
  • Spoon the spice mix into a sterilized jar and seal. Store for 2-3 months.
  • To make chai, boil 300ml water with a tea bag and ½ tbsp spice mix. Add 150ml milk, boil again, then strain and serve.

Notes

Store the spice mix in a cool, dark place for best flavor.
