Instructions
Season the prime rib with salt and pepper, then sear in olive oil until browned.
Add chopped vegetables, garlic, and herbs to the pot, then add beef stock and wine.
Place the seared prime rib in the pot and cover, cooking in the oven until desired doneness.
Remove the prime rib and let it rest before slicing.
Prepare the sauce with sour cream, horseradish, mustard, and Worcestershire sauce.
Serve the sliced prime rib with the sauce.
Notes
Let the prime rib rest for at least 20 minutes before slicing for the best results.
