  • 1.5 lbs boneless, skinless chicken thighs or breast
  • 1 medium yellow onion, chopped
  • 2 carrots diced carrots
  • 2 celery stalks diced celery
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour (for thickening)
  • 6 cups chicken broth or stock
  • 1 cup milk (for dumplings)
  • 2 cups all-purpose flour (dumplings)
  • 1 tbsp baking powder
  • 4 tbsp butter, melted (for dumplings)
  • to taste Salt & pepper Salt & pepper to taste
  • optional garnish Fresh parsley, chopped

Instructions
 

  • Melt butter in a large pot, cook onion, carrots, celery, garlic, and chicken until chicken browns and vegetables are translucent.
  • Sprinkle flour, stir, then gradually add chicken broth, simmer until thickened and chicken is cooked, about 20–25 minutes.
  • Mix flour, baking powder, salt, melted butter, and milk to form a sticky dough.
  • Drop spoonfuls of dough into simmering soup, cover, and cook for 10–15 minutes until dumplings are puffed and cooked.
  • Adjust seasoning, garnish with parsley if desired, and serve hot with dumplings and chicken.

Notes

For extra flavor, add herbs like thyme or bay leaves during cooking.
