Instructions
Pulse cauliflower into rice-sized pieces in a food processor or use pre-riced cauliflower.
Heat sesame oil in a skillet, sauté garlic, ginger, and green onions for 1-2 minutes.
Add carrots, peas, and bell pepper; stir-fry for 5-6 minutes until tender-crisp.
Stir in cauliflower rice; cook for 5-6 minutes until tender but not mushy.
Pour in tamari and rice vinegar; stir well, taste, and adjust seasoning. Garnish with green onions and serve hot.
Notes
Use fresh or frozen vegetables for best flavor. Adjust seasoning to taste.
