Ingredients
  

Vegetables

  • 1 medium head cauliflower (riced) or 4 cups pre-riced cauliflower
  • 1 tablespoon sesame oil (or avocado oil)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1/2 cup green onions (sliced) reserve some for topping
  • 1 cup carrots (diced)
  • 1/2 cup peas (frozen & thawed or fresh)
  • 1/2 cup red bell pepper (diced)
  • 3 tablespoons tamari (gluten-free soy sauce)
  • 1 tablespoon rice vinegar

Instructions
 

  • Pulse cauliflower into rice-sized pieces in a food processor or use pre-riced cauliflower.
  • Heat sesame oil in a skillet, sauté garlic, ginger, and green onions for 1-2 minutes.
  • Add carrots, peas, and bell pepper; stir-fry for 5-6 minutes until tender-crisp.
  • Stir in cauliflower rice; cook for 5-6 minutes until tender but not mushy.
  • Pour in tamari and rice vinegar; stir well, taste, and adjust seasoning. Garnish with green onions and serve hot.

Notes

Use fresh or frozen vegetables for best flavor. Adjust seasoning to taste.
