Instructions
Blend all pancake ingredients (except chopped apples) until smooth, then fold in chopped apples.
Heat a skillet and pour 1/4 cup batter for each pancake. Cook 2-3 minutes until edges set and bubbles form.
Flip pancakes and cook 2 more minutes. Repeat with remaining batter.
In a sauté pan, melt butter, then add brown sugar, pecans, and chopped apples. Sauté 4-5 minutes until apples are soft.
Top pancakes with warm apple pecan topping and serve.
Notes
For extra flavor, add a drizzle of maple syrup on top.
