Ingredients
  

Dry ingredients

  • 1 cup oats
  • 1/2 cup plain Greek yogurt
  • 1/2 cup applesauce
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 large Michigan golden delicious apple, chopped
  • 3 tablespoons butter
  • 3 tablespoons brown sugar
  • 1/4 cup chopped pecans

Additional chopped apple

  • 1/2 large Michigan golden delicious apple, chopped

Instructions
 

  • Blend all pancake ingredients (except chopped apples) until smooth, then fold in chopped apples.
  • Heat a skillet and pour 1/4 cup batter for each pancake. Cook 2-3 minutes until edges set and bubbles form.
  • Flip pancakes and cook 2 more minutes. Repeat with remaining batter.
  • In a sauté pan, melt butter, then add brown sugar, pecans, and chopped apples. Sauté 4-5 minutes until apples are soft.
  • Top pancakes with warm apple pecan topping and serve.

Notes

For extra flavor, add a drizzle of maple syrup on top.
