Cinnamon French Toast

A delicious plant-based twist on classic French toast, topped with fried apples and syrup.

Ingredients
  

Bread

  • 8 slices firm bread or gluten free bread
  • 1 cup dairy-free milk (e.g., almond milk)
  • 1 Tbsp ground flax seed
  • ½ cup firm or extra firm tofu, drained and patted dry
  • ½ Tbsp cinnamon
  • 2 tsp maple or agave syrup
  • 1 Tbsp vanilla
  • tsp salt
  • 2 Tbsp dairy-free butter for frying or spray oil

Instructions
 

  • Preheat oven to 350°F (176°C). Bake bread slices for 5 minutes, flip, then bake another 5 minutes.
  • Combine milk, flax seed, tofu, cinnamon, vanilla, syrup, and salt in a blender; pulse until smooth.
  • Pour mixture into a bowl and refrigerate for 10-15 minutes to thicken.
  • Heat a pan on medium and grease with butter or spray oil.
  • Dip bread slices in batter, then fry for 3 minutes per side until crispy.
  • Serve topped with fried apples, cinnamon, and maple syrup.

Notes

For extra flavor, add sliced fried apples on top before serving.
