Ingredients
  

Dry ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Wet ingredients

  • 2 large eggs
  • 1 3/4 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 medium apple, diced
  • 1/4 cup chopped pecans (optional)

Instructions
 

  • Preheat waffle iron to 375°F (190°C) and lightly grease.
  • Mix dry ingredients in a large bowl.
  • Whisk eggs, then add buttermilk, melted butter, and vanilla; combine.
  • Combine wet and dry, fold in diced apple, and rest 5-10 minutes.
  • Pour batter into waffle iron and cook 4-6 minutes until golden.
  • Serve warm with syrup or fruit.

Notes

For extra crunch, add chopped pecans before cooking.
