Ingredients
  

Meat

  • 1 1/4 pounds flank steak
  • 1/3 cup olive oil
  • 1 lime lime, zested and juiced
  • 1 tablespoon minced garlic
  • 1/2 cup cilantro, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper

Base

  • 2 cups cooked white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn

Toppings

  • 1 each avocado
  • 1/2 red onion sliced
  • 1 cup cherry tomatoes, halved

Cilantro lime crema

  • as needed sour cream or Greek yogurt with lime juice and zest

Instructions
 

  • Whisk olive oil, lime juice, lime zest, garlic, cilantro, salt, and pepper to make marinade.
  • Marinate steak for at least 1 hour in the refrigerator.
  • Cook steak in a hot skillet 3-4 minutes per side until medium rare, then rest.
  • Slice steak against the grain and assemble bowls with rice, beans, corn, avocado, steak, and toppings.

Notes

For extra flavor, marinate the steak longer or add hot sauce to the crema.
