  • 1 tablespoon extra virgin olive oil

cauliflower rice

  • 4 cups riced cauliflower from one medium head
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lime zested lime
  • 1/4 cup cilantro leaves roughly chopped

Instructions
 

  • Heat a large skillet over medium heat and add the olive oil.
  • Add cauliflower rice, salt, and pepper; cook for 5-7 minutes, stirring frequently.
  • Remove from heat and stir in lime zest and cilantro.
  • Garnish with additional cilantro if desired.
