  • 1/2 cup shredded carrots

Tangy Citrus Ginger Dressing

  • 1/4 cup fresh orange juice
  • 2 tablespoons olive oil
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar

Instructions
 

  • In a large bowl, combine chopped kale, bell peppers, and shredded carrots.
  • In a small bowl, whisk together orange juice, olive oil, ginger, honey, and vinegar to make the dressing.
  • Pour the dressing over the salad and toss to combine.
  • Top with sliced almonds and serve immediately.

Notes

Massage the kale slightly to soften it before tossing with the dressing for better texture.
